My first two attempts went completely disastrous as the cake was not spongy at all, and it SHATTERED completely when I was trying to roll it. TOTAL FAILURE!</p>
<p>Then I came across with <a href="http://zoomyummy.com/2010/08/06/strawberry-roulade/"><span style="color: #7b2e00;">this</span></a> recipe which looks very simple to come up with a soft sponge cake. I gave it a try, and it worked perfectly. Too bad I can&#8217;t tell what went wrong with my previous trials, probably because I wasn&#8217;t gentle enough to handle the cake batter, especially while folding in the egg whites. So I guess the key is BE GENTLE.</p>
<p><strong><span style="color: #7b2e00;">Ingredients (12-inch long roulade):</span></strong></p>
<address>6 eggs, separated</address>
<address>1 cup and 4 tablespoons confectioner&#8217;s sugar</address>
<address>1/2 cup cake flour</address>
<address>1/4 cup strawberry jam</address>
<address>1 cup heavy whipping cream</address>
<p><strong><span style="color: #7b2e00;">Directions:</span></strong></p>
<p>Preheat oven to 350F. Line a 12 x 15 inch baking pan with parchment paper. Grease it and flour it lightly.</p>
<p>Add 1 cup of sugar to the bowl with the egg yolks. Whisk with hand mixer until pale yellow and fluffy.</p>
<p>Add the flour, and mix briefly until incorporated.</p>
<p>In a separate bowl, whisk the egg whites until stiff and fold them in gently to the egg yolk mixture.</p>
<p>Pour the batter into the prepared pan. Spread the batter evenly.</p>
<p>Bake for 17 minutes or until golden brown.</p>
<p>While the cake is baking. Place a clean dish towel on your working surface. Then put a piece of parchment paper over the towel and sprinkle it with a little of confectioner’s sugar.</p>
<p>Immediately upon removing the cake from the oven, invert it onto the towel and the paper you have prepared. So now you have the dish towel and the paper underneath the cake and there’s also a piece of paper on top of the cake.</p>
<p>Remove the top paper carefully. Then roll the cake while it&#8217;s still hot. Let it cool.</p>
<p>Beat the cream until soft peaks form, then add the remaining 4 tablespoons of sugar and continue beating until firm.</p>
<p>When the cake is completely cool, unroll the cake and spread with strawberry jam. Top it with cream.</p>
<p>Re-roll the cake. Sprinkle with some more sugar if you want. Slice it and serve.</p>

<address><strong>Vanilla Butter Cream Frosting</strong><br />
4 sticks unsalted butter, soften</address>
<address>2 cups powdered sugar, sifted</address>
<address>1 tablespoon vanilla extract</address>
<address>3 tablespoons whole cream</address>
<p><span style="color: #7b2e00;"><strong>Directions:</strong></span></p>
<p>Preheat oven to 350F. Grease two 8-inch cake pans, line bottoms with parchment paper. Set aside.</p>
<p>In a bowl, lightly combine the egg yolks, 1/4 cup milk and vanilla extract.</p>
<p>In the bowl of your electric mixer, combine flour, sugar, baking powder and salt on low speed. Add butter and remaining 3/4 cup milk. Mix until the dry ingredients are moistened.</p>
<p>Increase the mixer speed to medium and beat for about 2 minutes. Scrape down the sides and the bottom of the bowl.</p>
<p>Gradually add the egg mixture, in 3 additions, beating well to incorporate the egg.</p>
<p>Divide the batter and pour into the prepared pans, smoothing the surface with a spatula. (Pans will be about half full) Bake 25 to 35 minutes or until a toothpick inserted into the cake comes out clean.</p>
<p>Place the cakes (in the pans) on a wire rack to cool. Then invert the cakes onto a greased rack.  Cool completely before frosting.</p>
<p>To prepare the frosting, beat butter for a few minutes with a mixer with the paddle attachment on medium speed.  Add powdered sugar and turn your mixer on the lowest speed until the sugar has been incorporated with the butter.  Increase mixer speed to medium and add vanilla extract and cream. Then beat for anther 3 minutes.</p>
<p>To assemble the cake, place one cake layer on your serving plate and spread with about 3/4 cup of frosting. Place the other cake layer on top of the frosting and cover the entire cake with a light layer of frosting. Then pipe the butter cream onto the side and top of the cake.</p>
<p>Cover and refrigerate the cake until serving time.</p>

<p style="text-align: justify;">Preheat oven to 350F. Grease and flour a bundt cake pan.</p>

<p>Cream butter, sugar and eggs in a stand mixer with the paddle attachment until light and fluffy.</p>

<p>Combine sour cream, coffee and vanilla. Add to butter mixture.</p>
</div>

<p>In another bowl, sift flour, baking powder, baking soda and salt. Gradually, add flour mixture to sour cream mixture, stirring until just combined.</p>

<p>Combine all streusel ingredients in a small bowl. Pull half of the cake batter into the cake pan. Sprinkle streusel over. Finish with remaining batter.</p>
</div>

<p>Bake at 350F until toothpick inserted into the center of the cakes comes out clean, about an hour.</p>
<p>Let cool on rack for 10 minutes before flipping the cake over on a plate. Let cool for another hour before you glaze it.</p>
<p style="text-align: justify;">To prepare glaze, combine some coffee with sifted powdered sugar until it’s smooth.  Then drizzle it over the cake.</p>

<p style="text-align: justify;">Transfer ham to a mixing bowl and let cool for about 10 minutes.</p>
<p style="text-align: justify;">Mix in spinach, ricotta cheese and herbs. Add salt and pepper to taste.</p>
<p style="text-align: justify;">Use a small spoon, carefully stuff the mixture into cannelloni.</p>
<p style="text-align: justify;">Place a layer of stuffed cannelloni onto a lightly greased baking dish.</p>
<p style="text-align: justify;">To prepare bechamel sauce, melt butter in a sauce pan over medium-low heat. Add flour and keep stirring with a whisk for around 2 minutes until it forms a paste.</p>
<p style="text-align: justify;">Increase heat to high, add the milk and stir constantly for about 5 minutes until the sauce thickens.</p>
<p style="text-align: justify;">Add nutmeg, salt and pepper to taste. Stir well.</p>
<p style="text-align: justify;">Pour sauce over cannelloni. Sprinkle with Parmesan cheese. Bake at pre-heated oven at 350F for 15 to 20 minutes until bubbly and the cheese on top becomes light brown. Remove from oven and let cool for 5 minutes before serving.</p>

<p>You turn 22 months old today.</p>
<p>Over these couple weeks, you&#8217;ve eventually found somebody that you love after your grandpa: yourself. You love how we shower you with positive feedbacks after we put some new clothes on you. You will pat your shirt on your chest and giggle maniacally when you hear us say, &#8220;Wow, Ethan, you look so handsome!&#8221;. Now anytime you see us taking your pictures or videos, you will try to come over and grab our camera, and see what shows on the screen. When you see yourself on it, you gaze at it with a big grin and say your name &#8220;Eton! Eton!&#8221; over and over again. One of the routines that truly proves how obsessed you are to yourself is everyday after your father showers you, he will wrap you with a big towel like how Dalai Lama put on his saffron robe. I have no idea why you love to be wrapped like that so much. But your father just can&#8217;t help but have to do it EVERY TIME, let you come over to show me while I&#8217;m cleaning dishes, before he can peacefully put pajamas on you. Sometimes, you are simply too indulged to be in the wrap that you keep running around the house with it and refuse to take it off. And that&#8217;s the moment your father either fiercely snatch you in his arms and take you to change or beg me for a dirty fork and jab it through his neck.</p>

When you get a chance to meet other grandpas of your friends as you grow up, I don&#8217;t think you can accept that if anyone of them does not do anything their grandchild wants. Because it&#8217;s senseless to you. &#8220;<span style="color: #7b2e00;"><a href="http://lululuathome.com/2010/04/to-ethan-18-months.html">My grandpa let me drive his car when I was not even 2, taught me how to screw the Vancouver traffic system</a></span>, and he took me in the bathroom to play pee-ka-boo with grandma while she&#8217;s taking a shower. What? Your grandpa doesn&#8217;t let you do these? NO WAY! IT&#8217;S ABSURD! Double check with your parents if he&#8217;s really your grandpa or call 911.&#8221;</p>
<p>Within our house, accompanied with your screams, there are also my frequent yells to your father after he has done something unacceptable like forgetting to change your diaper genie refills or farting as he walks past me and crop-dusting it through the house, so the smell fills every corner of it. Now, remember, in our house we live by one rule: whenever you fart, you stay where it starts. Being said that, Ethan, if I could give you any life advice, I would still suggest you to choose a partner who is not afraid to fart out loud. Life is too short to be uptight about such tiny thing. We might as well just enjoy the beauty behind it. And for this particular case, it&#8217;s how you call your father the way I call him. Whenever you hear me cry for your father, you follow me saying &#8220;Looooooooooo Gunggggggg&#8221; (&#8220;husband&#8221; in Chinese) continuously. As much as it sounds extremely fascinating, it usually works better than my call. Your father will pop out from nowhere very quickly. <p>You&#8217;re in this stage of life where the only way to communicate with us is by complaining. And that&#8217;s the thing about kids. You can simply yell and scream for whatever unsatisfactory and get away with it without any consequences because you don&#8217;t know any better. But when you are an adult, and you have to deal with dumb and mean people at work just because you need money to pay bills, sometimes it&#8217;s just not nice to complain all the time. And you have to learn to suck it.</p>
<p>If I could describe our day yesterday, I would say both your father and me were VERY CLOSE TO HELL. It started after we took you to a park, and had to take you away from the slide after you played 900 times. SINCE THEN, you became a completely irritable person. Nothing can help you forget that air is touching your skin and causing misery. You cried ALL DAY LONG! You struggled so hard trying to get yourself out of your carseat straps while your father&#8217;s driving. We were being racked by your agonizing bawls for quite some time before you felt exhausted and fell asleep. We thought it would help to let you sleep a little longer by taking a long drive to somewhere far to have lunch. Yes, WE THOUGHT! We WISHED! And finally I believe what most parents wish from their kids will not come true! NEVER! Now, since you constantly refuse to sit tight and eat, your portable DVD player with Sesame Street videos is the only solution for us to stop your screams and have a peaceful meal without being kicked out by the restaurant owners or other patrons. However, more than often, particularly in the situation where your screams are causing vexations, the battery for the DVD player goes DEAD! And that&#8217;s the moment we are completely screwed. So, this time we had the DVD player fully charged in the car on our way to lunch. It worked the first 5 minutes we were seated. Then you started to scream shoving off anything I could give you and throwing them on the floor. At once you almost dashed the DVD player which was showing Elmo the God! We had to chow down our bowl of hot noodle as soon as possible, preferably within 30 seconds, before you yelled like a psycho and threw every spoon of noodle that we tried to put in your mouth to other customers&#8217; tables. Eventually we had to take turns to bring you outside on the street to calm you down. And in front of everyone in the restaurant, we couldn&#8217;t be prouder at having been manipulated by a human being who&#8217;s not even able to wipe his own ass.</p>
<p>After lunch, I couldn&#8217;t feel like going home anymore. But, we tried to put ourselves closer to hell by doing grocery shopping. As usual, we knew it wouldn&#8217;t be easy for us because you would be strapped in the shopping cart not being allowed to sweep everything on the shelf. In an attempt to refrain your screaming, your father handed you a box of Cheerio, and this worked during the first 10 seconds until you demanded to open the box. It&#8217;s not helping even I gave you the little box of Cheerio I took with me. You wanted THAT big box, you wanted the Cheerio inside NOW, THIS INSTANT. Then your father said to you loud enough so that anyone in the parking lot outside the grocery store could hear, &#8220;Ethan, you have to pay for things. YOU UNDERSTAND?&#8221; I was teasing him in slience that why you would need to understand that when your parents are too stupid to bring you to this world to ruin their own lives. At the checkout counter, the lady running the checkout stand could tell by the look on my face that she had better scan that box of Cheerio faster than any Cheerio has the right to be scanned. She then tried to hand you back the box, but I stopped her and warned her, &#8220;I&#8217;m sure you don&#8217;t want to be in the situation that some trembling kid screams and demands to have the box opened, and you are not allowed to help as his parents don&#8217;t want to waste that $2.99 on the floor.&#8221;</p>

Then it brought me to the thoughts when we didn&#8217;t have you, thoughts comparable to what someone who never owned a pet feels when they see an adorable puppy on the street, and they want to cuddle it and take it home right away. At that moment, they never realize it will shit all over the place, eat their couch and bite their arms. And Ethan, I do think if you don&#8217;t bite my arms enough to bleed to death by tomorrow, I will get someone to do it for you.</p>
<p>However, I&#8217;ve also realized motherhood is not at all like the image I had in my head before. It&#8217;s so different, so surprising. When I thought you were such a harmonious and happy kid that so-called &#8220;Terrible Two&#8221; would not hit you whatsoever, I&#8217;ve seen the worst of you. Yet, the most marvelous surprise is my relationship with you is pushing me to become a more patient person, a much bigger person than I thought possible. You have helped me to see the parents I used to judge, including mine, are some of the most long-suffering people on Earth. Having you made me feel more human than anything I&#8217;ve ever done, made me feel less alone among strangers.</p>

<address style="text-align: justify;">8 ounces cream cheese, softened</address>

<address style="text-align: justify;">1/2 teaspoon vanilla extract<br />

<address style="text-align: justify;">2 cups fresh blueberries</address>
<p><span style="color: #7b2e00;"><strong>Directions:</strong></span></p>

<p style="text-align: justify;">Preheat over to350F. Grease six 3.5-inch tartlet pans.</p>

<p style="text-align: justify;">Take out doughs from refrigerator after being chilled for at least 30 minutes. Roll out the pastry on a lightly floured surface, until 3mm thick, and cut six 5-inch circles from it.</p>
</div>

<p style="text-align: justify;">Line the prepared pans with the dough circles. Make sure you leave a tiny overhang of dough.  Use a small kitchen knife to trim the excess and to score the tops of the tartlets. Bake for 20 to 25 minutes or until golden.</p>

<p style="text-align: justify;">To prepare filling, in the bowl of a standing mixer fitted with the whisk attachment, beat the cream until it holds firm peaks. Remove cream from bowl and keep cold in fridge.</p>

<p>In the same bowl, beat cream cheese until it&#8217;s soft and creamy.</p>
</div>
<div>
<p style="text-align: justify;">Add sugar and vanilla, continue beating until combined.</p>
</div>

<p style="text-align: justify;">Gently fold 1/3 of the whipped cream into the cream cheese mixture to lighten the mixture, then add the remaining cream and continue folding until incorporated.</p>

<p style="text-align: justify;">Evenly spread the cream mixture in the completely cooled pie crusts. Arrange the blueberries on top of the filling.</p>
</div>

<p style="text-align: justify;">Refrigerate the pies until set, about an hour.</p>

<address>1 pork tenderloin, trimmed of excess fat, patted dry</address>

1 tablespoon extra-virgin olive oil<br />
Lime juice, for drizzling<br />
Italian parsley, chopped for garnish</address>
<p><strong><span style="color: #7b2e00;">Directions:</span></strong></p>
<p style="text-align: justify;">Combine garlic, jalapeno, vinegar, parsley, oregano, and lime juice in a blender. Add olive oil and season with salt and pepper. Blend well and set aside at room temperature to allow the flavors to marry.</p>
<p style="text-align: justify;">Reserve half of the chimichurri to serve and marinate the pork with the rest.</p>
<p style="text-align: justify;">Put the pork and marinade in a sealable plastic bag and set aside in the refrigerator for 30 minutes. Don&#8217;t over-marinate.</p>
<p style="text-align: justify;">Preheat an outdoor charcoal grill or oven broiler to high. Remove the pork from the marinade, wiping off any excess. Season both sides with a generous amount of salt and pepper.</p>
<p style="text-align: justify;">Drizzle with olive oil and place on the grill. Grill the pork on the hottest part of the barbecue for 5 to 6 minutes per side, until well charred. Allow the tenderloin to rest for about 5 minutes prior to slicing.</p>
<p style="text-align: justify;">Spoon some chimichurri over the meat, drizzle with lime juice, garnish with parsley, and serve with the remaining sauce.</p>
