<p>It came to my realization that I haven&#8217;t been posting savory recipes as frequent as I used to be. It&#8217;s mainly because the time that I have to cook regular meals is limited with kids around. I&#8217;m only allowed to repeat the same dish over and over again unless that specific new recipe is extremely simple and can be done within a blink, like this one.</p>

<address>2 tablespoon fresh ginger, peeled and chopped</address>
<address>1/4 cup vegetable oil</address>
<address>1/4 cup sesame paste</address>
<address>1/4 cup smooth peanut butter</address>
<address>1/4 cup soy sauce</address>
<address>3 tablespoons rice vinegar</address>
<address>3 tablespoons honey</address>
<address>1/2 teaspoon hot chili oil</address>
<address>1 tablespoon sesame oil</address>
<address>1/4 freshly ground black pepper</address>
<address><strong>Others</strong></address>
<address>1 dozen shrimp, peeled and devined</address>
<address>1 tablespoon olive oil</address>
<address>1/2 pound soba noodle</address>
<address>1 red bell pepper, julienned</address>
<address>1 cup broccoli floral, cooked and cut in small pieces</address>
<address>1 teaspoon sesame seed</address>
<p><span style="color: #7b2e00;"><strong>Directions:</strong></span></p>
</div>
<p>To prepare dressing, combine all dressing ingredients in the bowl of a food processor. Blend until pureed. Set aside.</p>
<div>
<p>Heat oil over high heat in a small skillet, and cook shrimp 2 to 3 minutes on each side or until cooked through. Set aside.</p>
</div>
<div>
<p>In a large pot of salted boiling water, cook soba noodle until al dente. Drain the noodle and place it in a large bowl.</p>
<p>Toss the warm noodle with the sauce. Add red peppers, broccoli and shrimp. Sprinkle with sesame seed. Toss well. Serve at room temperature.</p>

<address style="text-align: justify;">425g ricotta cheese</address>
<address style="text-align: justify;">1/2 teaspoon dried basil</address>
<address style="text-align: justify;">1/2 teaspoon dried oregano</address>
<address style="text-align: justify;">Salt and freshly ground pepper to taste</address>
<address style="text-align: justify;">1 1/2 cups ground Parmesan cheese</address>
<address style="text-align: justify;"><strong>Bechamel Sauce</strong></address>
<address style="text-align: justify;">1/4 cup unsalted butter</address>
<address style="text-align: justify;">1/4 cup all-purpose flour</address>
<address style="text-align: justify;">2 cups warm whole milk</address>
<address style="text-align: justify;">Salt and freshly ground pepper to taste</address>
<address style="text-align: justify;">1/4 teaspoon ground nutmeg</address>
<p style="text-align: justify;"><strong><span style="color: #7b2e00;">Directions:</span></strong></p>
<p style="text-align: justify;">Cook cannelloni in a large pot of boiling water with a bit of oil according to the instruction. Drain and rinse with cold water. Set aside.</p>
<p style="text-align: justify;">Saute ham with olive oil in a pan until cooked.</p>
<p style="text-align: justify;">Transfer ham to a mixing bowl and let cool for about 10 minutes.</p>
<p style="text-align: justify;">Mix in spinach, ricotta cheese and herbs. Add salt and pepper to taste.</p>
<p style="text-align: justify;">Use a small spoon, carefully stuff the mixture into cannelloni.</p>
<p style="text-align: justify;">Place a layer of stuffed cannelloni onto a lightly greased baking dish.</p>
<p style="text-align: justify;">To prepare bechamel sauce, melt butter in a sauce pan over medium-low heat. Add flour and keep stirring with a whisk for around 2 minutes until it forms a paste.</p>
<p style="text-align: justify;">Increase heat to high, add the milk and stir constantly for about 5 minutes until the sauce thickens.</p>
<p style="text-align: justify;">Add nutmeg, salt and pepper to taste. Stir well.</p>
<p style="text-align: justify;">Pour sauce over cannelloni. Sprinkle with Parmesan cheese. Bake at pre-heated oven at 350F for 15 to 20 minutes until bubbly and the cheese on top becomes light brown. Remove from oven and let cool for 5 minutes before serving.</p>

<p>My previous mac-n-cheese attempts were always dry, not cheesy and most importantly the leftovers did not reheat well.</p>

<p>The cheese and cream melt-together sauce in this recipe completely solves this problem. I didn&#8217;t 100% follow the original recipe, I omitted the cauliflower, added mushroom and I used gouda cheese instead of parmesan, and it didn&#8217;t taste half-bad.</p>

<address>3 cups freshly grated Parmesan cheese (I used mozzarella as I ran out of Parmesan cheese. It turned out fine and cheesier!)</address>

<p>Combine olive oil, onion, celery and carrot in a saute pan with butter and cook over medium heat until onion turns pale gold, but not brown.</p>
<p>Add beef, and increase heat to high. Cook until browned. Sprinkle with cinnamon.</p>

<p>Stir in tomatoes, stock and season with salt and pepper. Bring to a simmer, then turn down the heat, cover the pan and let cook for 1 hour. Stir occasionally.</p>
<p>To prepare bechamel sauce. Warm milk in microwave until almost boiling. In a sauce pan melt the butter with flour over low heat. Stir rapidly with a whisk and cook for 1 minute.</p>
<p>Slowly add in the hot milk while stirring. Reduce heat to low, and keep cooking until the sauce begins to thicken.</p>
<p>Season with salt and pepper. Continue cooking and stirring until the right consistency has developed and lump free. Remove from heat.</p>
<p>Preheat over to 350F. Cook the lasagna in boiling water with a little bit oil for about 8 minutes, until al dente.</p>
<p>Lightly grease the baking pan. Put a layer of lasagna noodles down first, then layer on a third of the bolognese sauce, then a third of the bechamel sauce. Sprinkle with cheese. Repeat two more times. Top with a final layer of noodles and sprinkle with cheese.</p>
<p>Cover the pan with aluminum foil, and bake in the over for 45 minutes, until the sauce is bubbling. Remove the aluminum foil, cook for another 8 minutes until the top begins to get lightly browned. Remove from over and let cool for 5 minutes before serving.</p>

<p><span style="font-family: Verdana,sans-serif;">To prepare dressing, combine honey, red pepper, garlic, hot pepper paste and salt in the bowl of a food processor. Blend until the red peppers are pureed. Add lemon juice, vinegar and oyster sauce, stir well and set aside.</span></p>

<p><span style="font-family: Verdana,sans-serif;">Heat oil over medium heat in a small skillet, and cook garlic just until it is fragrant and begins to brown, about 1 minute. Remove from the heat and cool completely. </span></p>

<p><span style="font-family: Verdana,sans-serif;">In a large bowl, toss cooled pasta with garlic and oil.</span><span style="font-family: Verdana,sans-serif;"> Add red pepper, green onion and parsley. Toss with enough dressing to coat and chill before serving.<br />

<p>Add onion, garlic and tomato, and cook for 10 minutes. Stirring occasionally.</p>
<p>Add wine, cook for about 5 minutes over medium heat.</p>

<p><span style="font-family: verdana;">Add in chopped tomato and tomato paste. Simmer for 10 minutes until the liquid is much absorbed into the meat.</span></p>

<p><span style="font-family: verdana;">Pour in beef broth, rosemary, thyme and bay leaves. Put the lid on and cook for 1 1/2 hours.</span></p>

<p>I&#8217;ve been asked if I&#8217;m too busy with taking care of my son to cook. Of course not. We still need to eat. We still need to eat healthy, eat tasty, eat happy.</p>
<p>A couple weeks ago, my husband&#8217;s niece dug some really fresh and meaty giant clams from Victoria. Having been off from eating seafood for a long time (thanks for the pregnancy and breastfeeding), I went crazy with this pasta dish. I think both me and my husband had consumed at least 5 dozens in total.</p>

<p><span style="font-family: verdana;"><span style="font-style: italic; font-weight: bold;"> </span><span style="color: #7b2e00;"><span style="font-weight: bold;">Ingredients (serves 4, for my case, it serves 2):</span></span></span></p>

1/2 cup olive oil<br />
5 garlic cloves, sliced<br />
2 small shallot, sliced<br />
1/4 teaspoon dried thyme<br />
1/4 teaspoon dried basil<br />
1/4 red pepper flakes<br />
3/4 cup white wine<br />
1 cup Italian parsley, chopped<br />
1/2 pound linguine</span><span style="font-family: verdana;"><br />

<p style="text-align: justify;"><span style="font-family: verdana;">Clean and scrub the slams. Discard any open ones.</span></p>
<p style="text-align: justify;">In a large stockpot, heat olive oil over low heat, <span id="SPELLING_ERROR_1">sautee</span> garlic and shallot until fragrant.</p>
<p>Turn up the heat to medium-high, add clams and wine. Cover the pan and steam the clams until they open, about 3 to 5 minutes. Shake the pan occasionally to help them cook.</p>
<p>Check the clams. Discard those <span id="SPELLING_ERROR_3">unopened</span> ones. Remove the clams to a side dish, cover to stay warm.</p>
<p>Add the herbs and reduce the wine by 1/3. When reduced, stir in the parsley and remove from the heat.</p>
<p>Meanwhile, cook linguine in a large pot of boiling salted water until <span id="SPELLING_ERROR_4">al</span> <span id="SPELLING_ERROR_5">dente</span>. Drain the pasta, then toss the pasta with the sauce.</p>
<p style="text-align: justify;">Divide the pasta between individual dinner plates. Arrange the clams around each plate and serve with an additional fresh parsley on top for garnish.<span style="font-family: verdana;"><br />

<p>One thing I&#8217;m sure my boy would love to eat is spaghetti and meatballs. Which kid doesn&#8217;t love spaghetti and meatballs?! It&#8217;s such an universally loved dish that no kid (even adult) would ever resist. I always make a big batch of meatballs, and keep some frozen in the fridge&#8230;&#8230;just in case we need a quick-fix dinner.</p>

<p><span style="font-family: verdana;">Mix by hand in a large bowl all ingredients, except the last four.Shape into 1 inch meatballs. Roll and compress tight.</span></p>
<p>Heat frying pan on high heat. Add olive oil. Brown meatballs on all sides, about 2 minutes. Do not overcrowd the pan. You may need to cook them in 2 batches.</p>
<p>Add tomato sauce and ketchup. Gently stir the meatballs. Simmer for 20 minutes.</p>
<p>While the sauce is simmering, bring a large pot of water to a boil. Season water with salt, and cook spaghetti for 8 to 10 minutes until al dente.</p>
<p>To serve, put plain pasta on a plate, top with meatballs and sauce, and sprinkle with grated parmesan cheese.</p>

2 tablespoons canola oil<br />
200g minced beef<br />
1 tablespoon cumin powder<br />

<address style="text-align: justify;"><span style="font-family: verdana;">3 garlic cloves, minced</span></address>
<address style="text-align: justify;"><span style="font-family: verdana;">1 tablespoon brown sugar</span></address>

<address style="text-align: justify;"><span style="font-family: verdana;">6 to 8 large prawns, chopped</span></address>
<address style="text-align: justify;"><span style="font-family: verdana;">1/2 cup pumpkin seeds or skinned peanuts</span></address>
<address style="text-align: justify;"><span style="font-family: verdana;">salt and pepper to taste</span></address>
<address style="text-align: justify;"><span style="font-family: verdana;">a handful of chopped coriander, mint, Thai basil, green onion</span></address>

<address><span style="font-family: verdana;">1 jalapeno, finely chopped</span> <span style="font-family: verdana;">2 lime juice</span></address>

<address style="text-align: justify;"><span style="font-family: verdana;">2 tablespoons fish sauce </span></address>
<p style="text-align: justify;"><span style="color: #7b2e00; font-family: verdana; font-weight: bold;">Directions:</span></p>

<p style="text-align: justify;"><span style="font-family: verdana;">Soak the noodle in boiling water for 5 minutes for glass noodle or 15 minutes for vermicelli noodle. Drain.</span></p>
<p>Heat the oil in a sauce pan, cook minced beef with cumin and chili powder for 5 to 8 minutes until fragrant. Add garlic, sugar, prawns and pumpkin seeds or peanuts. Season with salt and pepper.</p>
<p>Mix ginger, jalapeno, lime juice and fish sauce for the dressing.</p>
<p>When the meat mixture is still warm, mix in the greens, noodle and dressing.</p>
<p>Serve when cooled.</p>
