Sour Cream Coffee Cake with Walnut Cinnamon Streusel

It’s my day off today. A real day off. On a WEEKDAY! Meaning not only being off from work, but since Ethan is at his grandparents, it also means my being off from something repetitive (like playing the same toy with Ethan over 400 times), maddening (like trying to convince him that bowl of pasta is not going to burn his stomach during that looooooooooooong lunch), and annoying (like being bombarded by his non-stop screams).

A very leisure weekday in months!

Ingredients (1 bundt cake):

Cake
2 sticks butter
1 cup white sugar
2 eggs
1/2 cup sour cream
1/2 cup strong coffee, completely cold
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Streusel
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped walnuts
Glaze
1/4 cup strong coffee
2/ 1/2 cups sifted powdered sugar

Directions:

Preheat oven to 350F. Grease and flour a bundt cake pan.

Cream butter, sugar and eggs in a stand mixer with the paddle attachment until light and fluffy.

Combine sour cream, coffee and vanilla. Add to butter mixture.

In another bowl, sift flour, baking powder, baking soda and salt. Gradually, add flour mixture to sour cream mixture, stirring until just combined.

Combine all streusel ingredients in a small bowl. Pull half of the cake batter into the cake pan. Sprinkle streusel over. Finish with remaining batter.

Bake at 350F until toothpick inserted into the center of the cakes comes out clean, about an hour.

Let cool on rack for 10 minutes before flipping the cake over on a plate. Let cool for another hour before you glaze it.

To prepare glaze, combine some coffee with sifted powdered sugar until it’s smooth.  Then drizzle it over the cake.
