Mini Blueberry Square Cake

When you are unhappy about the fact that your mom-in-law thinks, just because she has raised 4 kids and you are a newbie, what she does to your son is right and what you do is wrong, even you both do it exactly the same way, you know you are having so-called “mom-in-law tension” problem.

After several “talk-back” encounters, you start to keep quiet and let her act whatever she wants, then totally ignore what she commands you to do because you believe in yourself, you know you are getting rebellious.

When you put everything behind, and make this cake for her because you know deep down she just loves her grandson, you know you’ve become a real mom.

Ingredients (12 mini cakes):

2 cups plus 1 teaspoons all purpose flour
1 tablespoon baking powder
1/2 tablespoon baking soda
1 teaspoon salt
2 sticks unsalted butter, soften
1/2 cup plus 2 tbsp granulated sugar
3/4 cup packed light brown sugar
3 large eggs, room temperature
1 cup milk
3/4 cup blueberries (fresh or frozen, if frozen, do not thaw)
1/4 teaspoon ground cinnamon

Directions:

Preheat oven to 350F. Grease and flour a 8″x8″ baking pan.

In a medium bowl, whisk 2 cups flour, baking powder, baking soda and salt together.

With electric mixer on medium high speed, beat butter and 1/2 cup granulated sugar and 3/4 cup brown sugar until fluffy, about 3 minutes. Add eggs, one at a time, beating until just incorporated and scraping down the bowl.

Reduce speed to low and beat in one-third of flour mixture until incorporated, beat in half of milk. Beat in half of the remaining flour mixture, then remaining milk, and finally remaining flour mixture.

Toss half blueberries with remaining 1 tablespoon flour. Using rubber spatula, gently fold in blueberries. Spread batter into prepared pan.

Scatter remaining blueberries over top of the batter. Stir remaining 2 tablespoons granulated sugar with cinnamon together and sprinkle over batter.

Bake until tester comes out clean, 45 to 50 minutes.

Cool in pan for 20 minutes. Sprinkle icing sugar on top and serve. Or slice into square pieces and serve.
