Gotta finish as much as stuff into the refrigerator as possible before we move to our new house. And cut down grocery shopping to only necessity items.
This time I’ve picked the “can’t-be-more-ripe-banana” and “can’t-stay-any-longer-chocolate” as the must-go items. Afterall we miss banana chocolate muffin.
Ingredients (12 regular-sized muffins):
1 stick unsalted butter, melted 2 eggs 3 very ripe large bananas 1 teaspoon vanilla extract Dry 1 3/4 cups flour 1/2 cup white sugar 1/4 cup light brown sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt Others 1 cup Semi-sweet chocolate chip
Directions:
Preheat oven to 375F.
Mix both wet and dry ingredients separately. Stir together until just blended.
Fold in chocolate chip.
Scoop each muffin cup with almost full of batter, and bake until a toothpick comes out clean after inserting in the center of a muffin, about 20 minutes.
Let cool on a wire rack.
